Bavette steak comes from beef cattle and is also known as flap or flank steak. It is rich in flavour, lean and cut in a long thin shape. It is sourced from the underbelly of the cow, coming from just in front of the animals rear quarter. Lovers of the beefy flavour that comes with rump, but who also want some of the tenderness found in fillet steaks will certainly enjoy bavette meat.
