How To Barbeque Lamb

Lamb is always a winner at a BBQ. It’s quick to cook, easy enough to eat and tastes absolutely delicious. If you are cooking lamb chops they are a guaranteed hit, coming from a prime area of the lamb meaning the meat is going to be succulent and tender. Here is a quick and simple chop recipe for your next barbecue. 

 

BBQ Lamb Chops

  1. Bring your BBQ up to very high heat and let your lamb chops rise up to room temperature.

 

  1. Brush the chops with olive oil and some salt (you can play around with other spices but this recipe is keeping things simple). 
  2. Place your lamb chops on the hottest part of the barbecue and cook for a few minutes on each side for medium done chops. If you like your meat a bit more well-done, leave the chops cooking for a few extra minutes on either side.

 

  1. Remove the chops from the BBQ and let the meat rest for up to 5 minutes. 

 

If you want to take your food to the next level try marinating your chops beforehand with herbs and spices like garlic and chilli beforehand or play around with the fuel you use for your bbq, different wood chips can give your chops a different flavour. 

 

So this is a handy recipe for chops but what if you need to feed a few more? 

 

BBQing Leg Of Lamb

A Leg of lamb can be a great way to feed a crowd at your BBQ. A two-kilo leg of lamb can easily feed eight people. So let’s get into it. 

 

  1. Butterfly your leg of lamb and marinate it with rosemary, mint, chilli, cloves, some lemon zest, olive oil, salt and pepper and rub into the Lamb. Let it rest for at least an hour but aim for overnight.
  2. Preheat your BBQ to a high temperature
  3. Sear your Lamb until it has caramelised on both sides and move it to a cooler part of the BBQ
  4. Cook the lamb for around half an hour for medium, check it with a thermometer and remove it when it reaches around 60℃. 
  5. When up to temperature wrap the lamb in foil and leave it to rest for another 20 minutes
  6. Once the Lamb has rested, carve and enjoy.

Lamb goes great with a nice and simple salad. Lamb is nice enough itself to where you don’t have to go overboard with the salad. You don’t have to add any overcomplicated flavours or seasonings to your salad, keep things as you would. Some veg and a light dressing are all you’ll need.
